Wash your cranberries. Pick them over and discard any brown or overly wrinkly ones and stems.
Rinse the apple and orange. Core the apple and slice the ends off the orange (not necessary, I just do it to keep from getting too much bitter pith!).
Cut the apple into quarters and each quarter into about 12 pieces.
Halve the orange and quickly cut each half into uniform chunks - about 12.
Place half the cranberries, orange and apple in the food processor. Pulse to begin chopping the ingredients. Stop and scrape the large pieces down from the sides. Pulse or let the food processor run until they are uniformly small chunks. You do not want puree, but rather very small pieces! **
Transfer the relish to a glass container and process the remaining half orange, apple and cranberries.
Add to the previously processed ingredients and add the sugar. Stir well and refrigerate overnight (or for several days). The sugar will dissolve as it sits.
Store in a glass container in the refrigerator. Keeps for a week or so.
Enjoy with your Thanksgiving turkey or year round!
Notes
* Use whatever type of sugar you desire as long as it will dissolve in the mixture without cooking.
** Sometimes I add the sugar to the food processor. It does seem to help with the processing, but it will scratch the food processor bowl.
