A quick breakfast high in omega 3 fats, fiber and a good source of calcium. Three ingredients and just 5 minutes will fuel you all morning. Adding a variety of toppings keeps it fun and provides interesting flavors.
Add milk, ground flaxseed and sweetener (1 teaspoon maple syrup, honey, brown sugar etc) to a small bowl.
Stir to combine.
Refrigerate for 1 hour or overnight.
Top to add nutrition and variety (for example bananas, mango, peaches, berries, pumpkin seeds, walnuts, hemp seeds, or goji berries.

Notes
* You can grind whole flaxseeds in a blender or food processor.
** Any milk can be used. We have tried oat milk, almond milk, fat free milk, 2 % milk and almond milk. Read the labels for protein, fat and carbohydrate amounts. Milks with added gums can use more milk 1/3 cup. Milks without added gums start with 1/4 cup. Adjust the amount of milk to how thick you want your pudding to be.
If you are in a hurry, the pudding will be thickened enough after 15 minutes to eat. It will not fully thicken until overnight in the refrigerator.
Flaxseed pudding keeps for about 5 days in the refrigerator.
